DESCRIPTION:Join Claudia Lucero\, founder of Portland-based Urban Cheesecraft and author of “One-Hour Cheese\,” “Cooking with Whey\,” and “Instant Pot Cheese\,” for a hands-on afternoon of cheesemaking and tasting. Claudia will lead a live demo of a classic cultured cheese using simple\, approachable techniques for home kitchens\, sharing key steps\, ingredients\, and practical tips to make small-batch cheesemaking feel doable and repeatable. \nWhile bacterial cultures are used in most cheesemaking beyond quick cheeses\, the style of cultured cheese she will cover is lightly set and made with live bacteria to create the tang and depth of flavor found in French cheeses like Fromage Blanc and Chèvre. She will be representing Lane County Waste Management at their booth on Friday. Booth reps can answer your questions about recycling and safe food preservation. \nAttend one of the free seminars offered by Extension experts on topics such as gardening\, food safety and preservation and forestry and small farm resources.
